Discovered in 2013 during villa construction, this preserved cave offers a unique dining experience among stunning stalactites and crescent walls.
Chef Ryan Clift creates seasonal menus that highlight bold flavors and fresh ingredients, all served beneath captivating light projections that turn the ancient cave walls into a living canvas. Whether you choose the 7- or 10-course, each dish can be perfectly paired with curated wine or cocktail selections. For a bit of adventure, explore part of the cave —helmets and lights are provided by our team. This exclusive experience blends nature, art and gourmet cuisine, crafted just for you.

Meet Chef Ryan Clift
Ryan Clift, born in Devizes, England, began his culinary journey at 14, training with top chefs like Marco-Pierre White. He moved to Melbourne in 1999, where he became head chef at Vue de Monde, before founding Tippling Club in Singapore in 2008. Tippling Club quickly gained recognition for its innovative cuisine and cocktails, ranking among Asia’s Top 20 Restaurants. Ryan’s accolades include presenting at global food festivals and appearances on National Geographic and TV shows, including as a judge on ‘Eat List Star’.

Chef Nikhil Sengupta
With over a decade of culinary experience across world-renowned kitchens in the United Kingdom and Indonesia, Chef Nikhil brings refined technique and bold creativity to his role as Head Chef at The cave. Before joining us he was Sous Chef at the renowned Mozaic Restaurant, Ubud. His earlier years were spent honing his skills in London, serving as Head Chef at BaxterStorey and in senior roles at acclaimed restaurants including KOL, Royal Society of Medicine, and Michael Nadra.
Chef Nikhil’s cuisine reflects a thoughtful blend of classical training and contemporary flair, with a strong focus on flavor integrity, seasonality, and elegant presentation. His leadership at The cave continues to push the boundaries of immersive dining, blending gastronomy with art and storytelling in a subterranean setting unlike any other.
